Andy Williams Christmas CD is one of my favourite choices
for Christmas music and some holiday cheer.
I also have the 'Andy Williams Christmas Specials' DVD.
It contains highlights and Andy's personal favourite numbers
from the Christmas Specials he did during the 60's and early 70's.

Pumpkin Pie is not a dessert most Australians are familiar with,
or have indeed ever tried, so I was intrigued and inspired
by the song lyric to have a bash and make one.

Several years ago, mum and I both sourced our own recipes online.
I'm sure there are hundreds of variations, but this is my recipe.
And it makes two tasty pies...

Pumpkin Pie
1 1/4 cup Pumpkin Puree (I use Kent Pumpkins)
1 cup brown sugar (firmly packed)
1/2 teaspoon salt
1/4 teaspoon nutmeg
1 teaspoon cinnamon
2 eggs
1 cup Evaporated Milk
2 tablespoons water
1/2 teaspoon vanilla essence
2 Pampas Sweet Flan cases

Cut and cook Pumpkin. Puree or Mash. Cool.
Combine Pumpkin, sugar, salt and spice.
Then add eggs. Mix well.
Add Evaporated milk, water, vanilla. Mix well.
Pour mixture into pastry shells.
Bake at 200 degrees for 15 mins.
Reduce to 180 degrees for 35 mins.Beautiful served with thickened or whipped cream : )
